One of our favorite things to make and enjoy is macaroni and cheese. Whenever we do not know what to cook, we go straight for either pizza or macaroni. Because those are not the healthiest of foods, we always try to give them a spin that makes them a little more nutritious. This past week, when a macaroni and cheese craving hit us both, we decided to add broccoli to our usual go-to. Stirring in our favorite vegetable paired with rich goat cheese, made for one of the tastiest macaronis we have made yet! This broccoli macaroni was not only perfectly creamy, but the crunchy addition of roasted broccoli made it the tastiest dinner.




Broccoli Macaroni




For the past few weeks, Dan and I have been trying to go to the gym pretty regularly. Since a gym membership came with our new home and it is about four blocks away, we have definitely  ran out of excuses. After committing to it for a few days in a row, we fell into a routine that we have enjoyed following. Running is something I always forget that I love because it seems like a whole lot of work. Once a mile or two is complete, I feel like a ton of stress is lifted. There is something so freeing about running that I have loved putting back into my schedule. Another perk of working out and running more, is that it tends to change the way we eat. The more Dan and I work out, the more nutrients and veggies I start piling into our foods. Whenever I put working out into my schedule, healthier foods start appearing on my plate!




 

Broccoli Macaroni




This week, because of our gym visits, we have used so many vegetables in our cooking. When we stay mostly in the produce section of our grocery store, we know that it is because we are working out. We cannot wait to show you more of those veggie fueled meals that we have been so amazed by. Of course, guilty pleasure football snacks will also be appearing on our site in between these healthy dishes. However, this balance makes us enjoy cooking and eating even more.

Broccoli Macaroni with Goat Cheese

Broccoli Macaroni with Goat Cheese

Ingredients

  • 1 1/2 cups Broccoli, chopped
  • 2 tablespoons Olive Oil
  • Salt and Pepper
  • 1 pound Elbow Pasta
  • 3 cups Whole Milk
  • 1/2 cup Butter
  • 1/2 cup Flour
  • 2 teaspoons Salt
  • 1 1/2 cups Monterey Jack Cheese, grated
  • 1/2 cup Goat Cheese
  • 1/2 cup Breadcrumbs

Instructions

  1. In a baking dish, add the broccoli and drizzle with olive oil, salt and pepper. Bake in the oven for 40 minutes at 350 degrees.
  2. Boil water in a large pot and add elbow pasta. In a medium-sized pot, heat milk until it starts to bubble and then reduce the heat. In a separate pot, add the butter. When melted, slowly whisk in the flour. Whisk continuously for about 3 minutes. Add the milk slowly into the flour mixture and whisk continuously. Whisk mixture for another 3 minutes.
  3. Combine cheeses to the mixture and stir. Add the cooked pasta and stir for 5 minutes.
  4. Place macaroni and broccoli into a baking dish and top with breadcrumbs. Bake in oven at 375 for 10 minutes. Enjoy!
