With school fully back in swing, it is so important to us to make easy and satisfying meals. With both of us coming home later than in the summer, we look for dishes that can be whipped up quickly. Our only parameters when making these meals is that they must be fast, simple and loaded with flavors! This blue cheese and buffalo wedge salad perfectly checked each of those boxes – and then some! Dan and I do not tend to make salads as a main dish, but this one was so chocked full of incredible tastes that it easily stood on its own. Making a homemade dressing that was full of creaminess and zest also made this salad even more irresistible. After making this easy buffalo wedge salad, we will be having it again and again.

I have loved going back to work and being with my sweet students everyday. They are the greatest group and they each make my job so enjoyable and fulfilling. It is so rewarding to see their growth each day and to spend time with all of their little personalities. When I get home from giving every ounce to my awesome students, I want to create a meal that is done in no time. After I have worked hours teaching my favorite tiny people, I do not have a lot of energy to pour into cooking. Meals like this blue cheese and buffalo wedge salad are the best things to create when the day has been devoted to working hard.

Our favorite aspect of this dinner is the unexpected kick of buffalo sauce. If anyone looks into our recipe archives, they will see that we cook a lot of meals that have a twist of buffalo sauce. This spin is easily one of my favorites, because I am seriously addicted to anything buffalo flavored. I am someone who craves sour and tangy flavors over anything sweet or salty, and buffalo sauce fits right into that delicious category for me. Dan has been great with my buffalo obsession and happily lets me add it to anything we create. To me, a dish is not complete until it has an unexpected flavor burst.

Blue Cheese and Buffalo Wedge Salad

Ingredients

  • For the Blue Cheese Dressing
  • 1/2 cup Buttermilk
  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Pepper
  • 1/2 cup Blue Cheese, crumbled
  • For the Salad
  • 1 Iceberg Lettuce Head, quartered
  • 1/2 cup Carrots, chopped
  • 1/4 cup Green Onions, chopped
  • 2 Slices of Bacon, chopped
  • 1/4 cup Blue Cheese, crumbled
  • 1/2 cup Buffalo Sauce

Instructions

  1. For the Blue Cheese Dressing
  2. In a large bowl, mix the buttermilk, mayonnaise, sour cream, garlic powder, paprika and pepper. Whisk until fully mixed. Stir in blue cheese until thoroughly mixed.
  3. For the Salad
  4. Garnish quartered lettuce head with dressing, carrots, green onions, blue cheese and buffalo sauce. In a frying pan, crisp the bacon to desired crispness. Chop the bacon after grease is drained on a paper towel and place on top of the wedges. Enjoy!
