Sometimes the best meals come from last minute experiments. Today’s recipe was initially a simple pesto chicken dish. However, when I began rummaging through our fridge, I eyed some bacon and immediately wanted to see how I could incorporate it into the once basic plan. On a whim, I began unwrapping the bacon and then quickly wrapping it around each piece of chicken. Adding some pizazz to simplicity, this idea immediately made my mouth water and my creativity swirl! As I cooked this meal, there was little direction following and instead, ample hungry stomach listening. By the time the chicken was complete, I was so proud of the concoction and eager to serve it to our guests. We are extremely thrilled to announce that we have created what we call a BLT Pesto Chicken, a mouthwatering twist to a classic sandwich.

BLT Pesto Chicken

Once I began combining the ingredients from our fridge, more ideas began to leap into the pan. I added tomatoes for an extra layer, and made the pesto creamy for a surprising element. Putting the chicken on a bed of arugula that was drizzled with oil and balsamic vinegar, gave each bite an even more flavorful touch. As a novice cook, it was so exciting to see something become more intricate and thrilling by the minute! This plain, two-ingredient meal suddenly became layered with surprises.




Cook this recipe for a simple weeknight dinner, or save it for a dinner party to wow your friends. I’ve learned that getting inventive in the kitchen, can lead to a satisfying and delightful experience. I’ve also learned quickly in life that you can’t go wrong with bacon! Buon appetite!

BLT Pesto Chicken

BLT Pesto Chicken

Ingredients

  • 2-4 chicken breasts, thinly sliced or pounded to a ¼ of an inch
  • 2-4 strips of bacon
  • 2 tomatoes
  • ½ cup pesto
  • ¼ cup milk or cream
  • Baby arugula
  • Salt and pepper
  • Olive oil
  • Balsamic vinegar

Instructions

  1. Thinly slice or pound the chicken breasts to about a ¼ of an inch thick.
  2. Wrap one piece of bacon around each chicken breast.
  3. Pour olive oil into a medium-sized skillet and turn to medium-high heat.
  4. When warm, place the chicken breasts into skillet. We were able to fit three into breasts into the pan.
  5. Cook each side of the chicken for about 7 minutes.
  6. While the chicken is cooking, mix the pesto and milk in a small dish. The amount of milk can be preference. Ours was a medium-thick consistency.
  7. Prepare a bed of baby arugula on each plate and drizzle with olive oil, balsamic vinegar and season with salt and pepper to taste.
  8. When the chicken is fully cooked, pour the pesto over the chicken and reduce the heat.
  9. Add a slice of tomato to each breast. Cook for 2-3 minutes to have the new flavors settle.
  10. Serve atop the bed of arugula. Enjoy!
