Beef Stroganoff was a staple in Allie’s house. She loved nights when her family would sit together and enjoy it. She grew up having Beef Stroganoff and recalls the wonderful aromas that would fill the house as her mother prepared it. Beef Stroganoff

Allie’s mother is a teacher, so the idea of simple meals during the school year is nothing new. Her mother’s dedication to educating children in the rural area of Robbins, CA inspired Allie to follow in her footsteps and proudly pursue education. Dinner was a time when Allie’s family would come together and talk about their day as they enjoyed their meal. During the school year it is uncommon for Allie to get home before 6pm, so cooking together is our opportunity to do something together. No matter what we are cooking, any excuse for us to get in the kitchen is greatly welcomed.




Beef Stroganoff

Typically Stroganoff is cooked with small tender cuts of meat, but for our meal we used leftover ribeye steak. The ribeye certainly added an excellent taste and was a pleasant substitute to this dish. Utilizing leftover steak allowed us to cut down the cook time tremendously. We are firm believers that you do not have to follow traditional recipes verbatim, so we encourage everyone to try something different! Not all people will have leftover steak at their disposal, so cook the small cuts of meat in a skillet. This process allows you to cook the meat quickly, and you will be able to add the rest of our ingredients as you cook.

As mentioned, we wanted to keep this Beef Stroganoff in theme with our simple and fast meals. Another way we did this was by purchasing a packet for the sauce at the grocery store. All we had to do was add water to it, mix it, and then pour into our skillet. The creamy texture and taste was incredible. Although this was my first experience having Beef Stroganoff, it pleases me to say that it too filled our kitchen with a welcoming aroma. It is a meal I can see Allie and I having once a month! Our Beef Stroganoff is definitely recommended to parents trying to juggle busy schedules. If your children are returning for the new school year, you should definitely try this recipe. Beef Stroganoff

Ingredients

  • 1 pound Egg Noodles
  • 1 cup Mushrooms, sliced
  • Olive Oil
  • 1 cup Steak, sliced* We used leftover steak from a steakhouse the previous night
  • 1/2 cup Frozen Peas
  • 1 cup water
  • 1 package Beef Stroganoff Seasoning
  • 1 cup Sour Cream
  • 2 tablespoons Chives, chopped

Instructions

  1. Boil egg noodles in a large pot.
  2. Meanwhile, slice the mushrooms and steak. In a medium saucepan, add olive oil and mushrooms and cook until soft.
  3. In the same saucepan, add the steak and heat it until warm. We used precooked, leftover steak. If using fresh steak, add that first to the pan and cook it in the desired manner.
  4. Once the mushrooms and steak are cooked, stir in the peas, water and seasoning.
  5. Bring to boil and then reduce the heat to medium-low.
  6. Cook covered for ten minutes and then stir in sour cream.
  7. Top with chives and enjoy!
