We are on a definite taco kick in our house! Night after night this week, we have been enjoying different kids of delicious tacos. We love how tacos can hold absolutely any flavor. From savory, to tangy to sweet, tortillas can be stuffed with just about anything to have a fantastic bite. These banh mi tacos were born out of a desire to make something spicy and to try to recreate one of our very favorite sauces.

If any one has been to Chico, California, they probably know of an amazing place called Tea Bar. Given that Dan and I met in Chico, one of our favorite places to hang out together was Tea Bar. Tea bar makes incredible teas in amazing flavors and blends them into fun drinks. Whether it is a sparkling iced tea or a frosty, frothy tea, this place has some of the tastiest tea drink I have ever tried. Besides their tea, they also have amazing rice bowls that feature any kind of meat of your choosing. While the vegetables, rice and meat were always incredible, I was particularly obsessed with their creamy teriyaki sauce. For years I have tried to recreate this beyond amazing sauce. With every attempt, I was pretty disappointed with the outcome. While the sauce was always good, it was never as good as the creamy teriyaki sauce at Tea Bar. However, last night, I think I finally got the sauce down! It was the perfect addition to these tasty banh mi tacos!

These banh mi tacos had the perfect crunch mixed with the perfect balance of a tangy sauce. On top of that, every bite had a kick of perfect spice from the jalapeƱos. We loved how all of the flavors blended beautifully together to make the perfect taco. Every bite had a different and great flavor that made us so excited for more.

These tacos would be the perfect, fast weeknight meal. It would also be fun for a couple to make for a date night in. We loved how the bold flavors and perfect sauce were so tasty inside of the tortillas. Not only was this a fun meal to devour, but it was also a simple one to make. Because of the addition of rotisserie chicken, it was almost effortless to throw together. After the veggies were chopped and the sauce was quickly made, it was so simple to toss all of the ingredients into the tortillas. We know that you will love these tacos as much as we did. And if you are a fan of Tea Bar in Chico, you must try this sauce and see if you think it is just right!

Ingredients

    For the Tacos
  • 4-6 Corn Tortillas
  • 1 cup Rotisserie Chicken, shredded
  • 1 cup Cole Slaw Mix
  • 1/2 cup Cilantro
  • 12 Chopped Jalapenos
  • 1 Cucumber, thinly sliced
  • For the Sauce
  • 3 tablespoons Mayo
  • 1 1/2 teaspoons Soy Sauce
  • 1/2 teaspoon White Vinegar
  • 1/4 teaspoon Garlic, minced
  • 1/4 teaspoon Ginger, minced
  • 1/4 teaspoon Lemon Juice
  • 1/4 teaspoon Sugar

Instructions

  1. After all of the vegetables are chopped, start by assembling all of the tacos. Each need chicken, cole slaw mix, cilantro, jalapenos and cucumber.
  2. For the sauce, mix the mayo, soy sauce, white vinegar, garlic, ginger, lemon and sugar.
  3. Pour the sauce evenly over each taco. Enjoy!
