Fall is officially here! In our little household, we absolutely love fall! The comfort foods, the baked goods, the cozy weather and foliage make us both so incredibly happy! While summer is an amazing time for a tired teacher to relax and have fun, fall is my favorite time to cozy up and enjoy the cooler weather. Some of our favorite memories have occurred in the fall and our favorite foods involve amazing fall flavors. Recently, we were dreaming of fall and were compelled to make this cheesy, comforting dish. Our baked Bolognese gnocchi encompasses fall in every single bite. With tangy sauce, gooey cheese and filling gnocchi, this dish is the perfect autumn staple that will satisfy and leave you feeling the warmth of comfort food in the fall.

This baked Bolognese gnocchi had us imagining strolling through pumpkin patches, ordering pumpkin lattes, and making baked goods in the warmth of our kitchen. With Dan’s new job, we are treasuring our weekends. Already, we have planned and filled so many activities that allow us to soak up fall. Whether they are mini day trips, outings or experiences in our home, we are thrilled to explore fall together.

I love that with fall food, stereotypical foods do not need necessarily to be used. Even though I am pretty obsessed with pumpkins, butternut squash, apples and cinnamon, a true fall dish does not need to be encompass these. In our opinions, anything warm and bubbly from the oven, constitutes as an amazing fall dish. I am definitely a sucker for a pumpkin spice latte. However, relishing in a mocha and a donut while strolling in the crisp weather outside, can also help me to celebrate this great season. Coming home to a hearty and delicious oven baked masterpiece does the same trick for me.

Our baked Bolognese gnocchi is an amazing treat that can fill the house with warmth and delicious aromas. The minute Dan walked in the door, he was blown away by the hearty smells bursting from our oven. He was even more surprised by the incredible taste. Each bite was dripping with sauce and filled with cheese. Because of the simplicity of the dish, we know that it will also become a great staple in our house. With just a short amount of time to prepare dinner each weeknight, this is the perfect and filling meal to make. Best of all, with busy work schedules, there was plenty of leftovers to take to work the next morning. We hope that when you savor this tasty dish, you are enjoying a day that celebrates fall!




Baked Bolognese Gnocchi

Baked Bolognese Gnocchi

Ingredients

  • 2 packages Gnocchi
  • Olive Oil
  • 1 tablespoon Garlic, minced
  • 1 pound Ground Turkey
  • 1/2 cup Onions, chopped
  • 15 ounces Tomato Sauce
  • 2 tablespoons Tomato Paste
  • 1/2 cup Fresh Basil
  • Salt and Pepper
  • Parmesan Cheese, shaved

Instructions

  1. Preheat oven to 375 degrees. Boil gnocchi according to package directions.
  2. In a large skillet in medium heat, cook turkey and onions in oil and garlic until turkey is browned and onions are translucent. Pour in tomato sauce and tomato paste. Add basil leaves, salt and pepper. Bring to boil then reduce to a simmer. Cook for an additional five minutes for all of the flavors to meld together.
  3. Remove water from gnocchi and place in a medium baking dish. Layer sauce and cheese in the dish. Once all of the sauce and gnocchi is mixed together, top with more cheese. Bake for 20 minutes. Enjoy!
