I know what you are thinking. I thought for the Patriots you guys would make clam chowder. Well, we did too. However, being a little skittish of eating clams, I decided to not go that route. For a few days in a row, I was not looking forward to buying clam chowder ingredients and made excuses to make other things. Therefore, after realizing that I probably should not cook something I was dreading, we decided to go another route to represent the Patriots. Realizing that baked beans are a staple in New England, we searched for a way to incorporate them into game day food. After some brainstorming, we came up with these tasty baked beans and cornbread bites. Once we dug into these, we were so impressed by our last minute concoction.

Perfect for fall, these cornbread bites are so fun to serve at a party or to chow down before dinner. We loved how the cheesy bread was a perfect balance with the sweet beans and crispy bacon. Together, this combination was an unexpected surprise. 




Cornbread Bites with BaconDan and I do not eat a lot of cornbread, but when we do, we remember how deliciously good it really is. Given the recent cold weather, corn bread is a great and classic comfort food. With fall finally feeling like fall around here, corn bread is the perfect thing to enjoy with dinner.




Cheesy Cornbread Bites

When we put both of our recipes head to head we were able to come up with a winner. Previously, we made fried chicken tacos with peach salsa to represent the Atlanta Falcons. This game is especially fun to predict the winner based on our recipes, since they played in the previous Super Bowl. When we watched that big game last February, I was rooting for the Falcons.




Cornbread Bacon Bites

This time around, solely based on our recipes, we will choose the Falcons once again! Even though these cornbread bites were a fun and different combination, there was something to fantastic about biting into a fried chicken taco that was dripping with spicy mayo sauce. We are now 5 out of 6 in our weekly predictions, and hope we stay on a lucky roll! It is shocking that our predictions based on food have been correct, and we love being surprised by the outcome each week.

Baked Bean and Cornbread Bites

Ingredients

  • 1 cup Buttermilk
  • 1/2 cup Butter
  • 2 Eggs
  • 1 cup Flour
  • 1 cup Cornmeal
  • 2 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1/2 cup Canned Baked Beans
  • 3 Bacon Strips, cooked and crumbled
  • 1/4 cup Green Onions

Instructions

  1. Preheat oven to 375 degrees.
  2. In a medium bowl, whisk together buttermilk, butter, and eggs.
  3. In a large bowl, combine the flour, cornmeal, baking soda, salt and whisk. Pour the wet ingredients into the dry ingredients and stir until lumps are gone. Stir in the cheese.
  4. Prepare a small cupcake tray by greasing it. Fill each cupcake tin 3/4 of the way. Bake for 15-18 minutes or until the cornbread is golden brown.
  5. Heat up the beans and cook the bacon. Top each cornbread bite with baked beans, bacon and green onions. Enjoy!
